Ribollita Da Delfina with Sangiovese

Chef Brandon McGlamery shared his version of ribollita, the traditional Tuscan vegetable soup, with Wine Spectator. He makes patties out of the bread-thickened soup and pan-fries them in the region's delicious olive oil. A sweet crust forms on the patties, which are then served with broth poured around them.
