The University of California, Davis, is known as one of the leading schools for enology in the U.S., but for nearly a decade it has also applied a similar rigor to coffee. Led by professor and chemical engineer William Ristenpart, the program teaches students how to perfect the science of roasting beans and brewing coffee.
